Beef Glazed with Balsamic Vinegar Sauce

Ingredients:
- 1 lb beef tenderloin, cubed
- 1/2 stalk carrot, shredded
- 1/4 cup gluten free balsamic vinegar (e.g. Bertolli's)
- 2 tbsp sugar
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper

Preparation:
- In a small bowl, mix balsamic vinegar, sugar, salt, and black pepper as sauce.
- Heat olive oil in skillet on medium heat. Add beef to skillet and brown for 2 minutes.
- Coat meat with sauce. Sprinkle carrots evenly over meat.
- Simmer for 10 minutes.
- Serve with rice
