Ingredients:
- 1 lb skinless and boneless chicken breast or thigh, sliced
- 1/2 onion, thinly sliced
- 1 cup gluten-free ketchup (e.g. Heinz)
- 1/2 tbsp lemon juice
- 1/2 tbsp gluten-free red wine vinegar (e.g. Bertolli's)
- 1/2 tbsp gluten-free soy sauce
- 1/2 tbsp sugar
- 1/2 tbsp cumin powder (or curry powder or mustard)
- 1 tsp oreganon powder
- 1 tsp parsley powder
- 3 tbsp olive oil
Preparation:
- In a skillet, heat 2 tbsp olive oil on high. Add chicken slices and stir until cooked. Take chicken out and set aside.
- Combine ketchup, lemon juice, red wine vinegar, soy sauce, sugar, and cumin power in a bowl. Mix well.
- Add the remaining oil to the skillet. Saute onion until aromatic. Pour sauce mixture into the skillet and stir for a minute.
- Add chicken back to the skillet and sprinkle the surface with oreganon and parsley. Turn heat down and close lid to simmer for 10 minutes.
