Brownie



Ingredients:
- 1/2 cup unsweetened gluten-free chocolate chips (e.g. President's Choice chocolate chips)
- 1 cup sugar
- 2 eggs
- 1/2 cup butter
- 2 tbsp gluten-free cocoa powder (e.g. Fry's cocoa powder)
- 2 tbsp rice flour
- 2 tbsp corn starch
- 1/4 tsp xanthum gum
- 1 tsp vanilla

Preparation:
- Preheat oven to 350F.
- Place chocolate chips in a glass measuring cup. Heat in a microwave for 20 seconds, stir and heat for another 20 seconds, until the chocolate is melted.
- Sweep the melted chocolate in a large bowl. Add butter, sugar, eggs, and vanilla. Mix until smooth.
- Add cocoa powder, rice flour, corn starch, xanthum gum. Mix until smooth.
- Pour the mixture into a greased baking pan. Bake for 40 minutes.
- Sprinkle with gluten-free confection sugar or rasberry coulis.
