Potato Salad


Ingredients:
- 2 potatoes
- 3 tbsp gluten-free mayonnaise (e.g. Hellmann's)
- 2 tsp salt

Preparation:
- Peel potatoes and cut them in half an inch cubes.
- Place potatoes in a medium-sized pot and add enough water to cover the potatoes. Add 1 tsp salt to add flavor. Boil the potatoes in water for 5 minutes.
- Rinse potatoes in cold water and drain. Transfer the potatoes into a salad bowl. Add mayonnaise and stir evenly.
