Chocolate Cake


Ingredients:
- 1 cup chocolate chips (e.g. PC Financial chocolate chips)
- 1 can (400ml or 13 oz) garbanzo beans, rinsed and drained
- 2 extra large eggs
- 1 tsp vanilla extract
- 1/2 cup white sugar
- 1/2 tsp gluten-free baking powder

Preparation:
- Pour chocolate chips in a large glass bowl. Heat in microwave for approximiately 2 minutes, until the chocolate melts and becomes smooth. Stir every 20 seconds after the first minute.
- In a blender, combine garbanzo beans, eggs, and vanilla extract. Pulse mixture until chopped. Add sugar and baking powder. Continue to pulse until puree.
- Preheat oven to 350F. Transfer the mixture to the bowl and mix well with the melted chocolate.
- Grease a cake pan with butter. Transfer the mixture from the bowl to the cake pan.
- Bake for 40 minutes. When baked, place the cake pan on a wire rack to cool.
