Corn and Potato Salad


Ingredients:
- 1 cup corn kernels
- 6 large potatoes
- 4 tbsp mayonnaise (e.g. Helmmann's)
- 1 tsp salt

Preparation:
- Peel potatoes and cut them into 1cm x 1cm x 1cm cubes
- Boil potatoes in a pot. When water boils, turn heat down to medium-low and simmer for another 5 minutes. Turn heat off. Drain water from pot. Transfer potatoes to a salad bowl and let cool for 5 minutes.
- Mix in corn kernels, salt and mayonnaise with the potatoes. 
- This simple and refreshing salad is ready to be served.
