Cinnamon Bun


Dry Ingredients:
- 1 cup potato starch (or tapioca starch)
- 3/4 cup brown rice flour
- 1/4 cup quinoa flour
- 2 tsp xanthan gum
- 1/2 tsp salt
- 1/4 cup sugar

Wet Ingredients:
- 2 tsp dry yeast
- 1 cup warm water
- 1 tsp sugar
- 2 eggs
- 2 tbsp olive oil
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 tsp lemon juice

Preparation:
- In a large bowl, combine potato starch, brown rice flour, quinoa flour, xanthan gum, salt and 1/4 cup sugar. Mix ingredients well.
- In a separate bowl, mix dry yeast, 1/4 cup warm water, and 1 tsp sugar.
- In a separate bowl, beat eggs and then add olive oil, and 3/4 cup warm water. Pour yeast ingredients into the bowl and stir until yeast is fully dissolved.
- Pour the wet ingredients into the dry ingredients slowly. Stir constantly until the dough is uniform.
- Place a 12 inch x 24 inch saran wrap on a flat surface. Transfer the dough onto the saran wrap and spread the dough as thinly as possible across the saran wrap.
- In a separate bowl, mix brown sugar, cinnamon, and lemon juice. Spread the filling mix evenly on top of the dough.
- Lift up the two edges along the short side of the saran wrap slowly to allow the dough to roll back into itself. Continue lifting up the saran wrap until all the dough has rolled up.
- Transfer the dough to a baking sheet. Bake at 375F for 20 minutes until the top turns golden brown.
