Fava beans


Ingredients:
- 1 can fava beans
- 2 tbsp olive oil
- 1/2 onion, diced
- 1 tomato, diced
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1 tbsp gluten-free tahini paste (or gluten-free sesame oil)
- 1/4 cup gluten-free tomato sauce (e.g.: Hunt's or Heintz)
- 2 tbsp lemon juice
- 1/4 cup fresh parsley flakes

Preparation:
- Drain can and rinse fava beans. Squash the beans with a masher as fine as possible.
- In a pot, heat olive oil on medium heat. Add onion, tomato, and garlic until aromatic. Add fava beans, cumin, tahini paste, and tomato sauce.
- Turn heat down to simmer for 10 minutes. Add lemon juice and parsley flakes to garnish.
