Sponge Cake



Ingredients:
- 1/2 cup corn starch
- 1/4 cup quinoa flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 tsp xanthan gum
- 5 egg yolks
- 5 egg whites
- 3/4 cup sugar
- 1/4 cup orange
- 1 tsp lemon zest
- 1 tsp vanilla

Preparation:
- Preheat oven to 325F.
- In a large bowl, combine corn starch, quinoa flour, salt, baking powder, xanthan gum.
- In a separate bowl, mix egg yolk, sugar, orange juice, orange, vanilla together. Slowly mix the dry ingredients into the liquid.
- In a measuring cup, beat egg white with egg mixer until the egg foam is stiff (turn the measuring cup upside down, egg foam should not spill).
- Mix the egg white with the liquid mixture.
- Pour the mixture into a tube pan. Bake for 40 minutes.
