Spicy Lemon Chicken

Ingredients:
- 8-12 skinless boneless chicken thighs
- 4 tbsp lemon juice
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup chicken stock
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp corn starch
- 3 tbsp olive oil

Preparation:
- In a large skillet, heat oil on medium-high heat. Brown chicken on both sides for 3 minutes. Take the chicken out and set aside. Leave oil in the skillet.
- In a large bowl, combine chicken stock, cumen, oregano, thyme, salt, and pepper.
- Heat the same skillet on medium heat. Saute garlic and onion for 2 minute, until onion starts to soften. Add corn starch and stir until mixed into the onion.
- Pour chicken stock liquid to the skillet and turn heat up to boil. Place the chicken back to the skillet and immerse them under the liquid. Simmer for 20 minutes.
