Crispy Meat Balls


Ingredients:
- 1 lb ground pork
- 2 eggs
- 1 potato, peeled and finely chopped
- 1 tbsp ginger
- 1/2 stalk green onion, finely chopped
- 1/2 tsp salt
- 1 tbsp soy sauce
- 1/4 cup gluten-free rice bread crumbs

Preparation:
- In a large bowl, mix ground pork, 1 egg, potato, ginger, green onion, salt, and soy sauce together.
- Preheat oven to 375F.
- Pour bread crumbs onto a shallow plate. Beat the second egg in a small bowl. Knead the meat into 1.5 inch balls. Coat the balls with egg, and roll them over the bread crumbs, until the balls are completely coated. Place the meat balls on a deep greased roasting pan.
- Bake in oven for 30-40 minutes.
