Ingredients:
- 1 cup rice flour
- 1/2 cup corn starch
- 3/4 cup butter
- 1/2 cup gluten-free icing sugar (e.g. Lantic)
Preparation:
- Mix all dry ingredients together. Warm butter and add to the dry mixture. Mix well with hands.
- Cover and refrigerate for an hour.
- Form the mixture into 1 inch in diameter balls. Flatten with fork to make round cookies.
- Place on greased cookie sheet and bake 300F for 20 minutes or until edges begin to brown.
