Chicken Curry

Ingredients:
- 2 lb skinless chicken breast, chopped in cubes
- 1 green pepper, chopped
- 1 tomato, chopped
- 2 tbsp gluten-free curry powder
- 1 tbsp turmeric
- 1 tbsp ginger, minced
- 2 clove garlic, minced
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp thyme
- 2 tsp of corn starch
- 2 cups chicken stock or water

Preparation:
- Marinate chicken with curry powder, turmeric, ginger, garlic, and olive oil for 30 minutes.
- Heat a skillet on high heat. Melt butter and pour chicken in the skillet. Stir frequently for 1 minute. Add corn starch and continue to stir until most of the meat changes color.
- Add chicken stock or water to the skillet and wait until it boils. Cover the skillet and simmer the chicken for 30 minutes.
- Add pepper and tomato and simmer for another 10 minutes.
