Yellow Cake

Ingredients:
- 3/4 cup rice flour (e.g. Red Hill brand)
- 1/4 cup tapioca flour (e.g. Red Hill brand)
- 2 tsp gluten-free baking powder
- 1/2 tsp gluten-free xanthan gum
- 1/2 tsp salt
- 2 eggs, room temperature
- 1/2 cup sugar
- 1/2 cup milk or mayonnaise, room temperature
- 1/3 cup butter, melted
- 1 tsp maple syrup, room temperature
 
Preparation:
- Mix rice flour, tapioca flour, baking powder, and xanthum gum together. Sieve once.
- Combine eggs and sugar and beat until fluffy. Add milk, butter, maple syrup into the liquid mixture until smooth.
- Pre-heat oven to bake at 350F. Grease a cake pan with butter.
- Slowly pour the liquid mixture into the flour mixture. Mix until no dry flour can be seen. Remember not to over mix.
- Transfer the dough into the cake pan and bake for 25-30 minutes.
