Pork Stir Fry with Sliced Potato and Black Fongus


Ingredients:
- 1 lb of pork tenderloin
- 1 cup of dried black fongus (can be purchased in Chinese store)
- 1 potato
- 1 tbsp of ginger
- 1/2 stalk of green onion, chopped
- 2 tbsp of soy sauce (e.g.: Lifesource's Tamari soy sauce)
- 2 tsp of salt
- 1 cup of oil
Preparation:
- Soak black fongus in warm water for 1 hour, until it softens. Tear the black fongus in small pieces.
- Cut tenderloin into 2mm thin slices. Rinse in cold water to remove excess of blood and drain.
- Marinate the meat with ginger, green onion, soy sauce, and salt. Let the marinated meat sit for 30 minutes for better taste.
- Cut potatos in thin slices. Rinse in cold water and drain.
- Heat oil in a frying pan on high heat. When oil is hot, add the meat to the pan and stir fry frequently, until the meat changes color. Add black fongus and potatos and stir fry for another 3 minutes.
- Serve with rice. Not only is black fongus delicious, it is also a very good antioxidant.
