Mango Chicken

Ingredients (serving for four):
- 2 pieces of skinless chicken breasts (500g)
- 1 large mango
- 1 scoop of bean sprout
- 1 tsp of ginger
- 2 tbsp of gluten-free soy sauce
- 2 tbsp of water
- 1/2 cup of oil
- salt and parsley

Preparation:
- Cut chicken in thin slices. Marinate with ginger, soy sauce, salt, and water. Set aside for 10 minutes.
- Meanwhile, peel and cut mango into thin slices. Wash bean sprout and drain.
- Heat pot with oil. Stir fry chicken until cooked. Pour mango and bean sprout in the pot and continue stirring until all the juice is absorbed.
- Season with salt and parley.
