Chicken Fajitas with Salsa and Guacamole

Preparation time: 1 1/2 hours including making of salsa and guacamole 

Chicken Fajita Ingredients (serving for 4): 
- 4 slices of gluten-free tortillas 
- 1 lb chicken breasts (beef sirloin) 
- 1 tsp garlic 
- 2 tsp lime juice 
- 2 tsp gluten-free chili sauce (e.g.: Frank's RedHot chili sauce) 
- 2 tsp salt 
- 1/4 onion 
- 1 red pepper 
- 1 bowl of sour cream 

Salsa Ingredients (or use Salba Smart Salsa sauce): 
- 2 tomatoes 
- 1 green pepper 
- 1/2 onion 
- 3 stalks green onion (white part only) - 1 tbsp gluten-free chili sauce 
- 2 tbsp lime juice 

Guacam6ole Ingredients: 
- 2 avocados 
- 1/4 onion, thinly diced 
- 1 tbsp lime juice 
- 1 tbsp of oil
- 1tsp salt 

Salsa Preparation: 
- Cut tomato, green pepper, and onion in small pieces. Heat pot on medium heat. Add tomato, green pepper, onion, lime juice, and chili sauce. Stir fry for 5 minutes until pepper softens. 
- Remove from heat. Add green onion and sit aside to cool for an hour. 

Guacamole Preparation: 
- De-core avocado and scoop the avocado meat to a bowl.
-Add onion, lime juice, oil and salt to the bowl. Use a masher or a table spoon to crush for 1 minute until puree. 

Chicken Fajitas Preparation: 
- Cut chicken (or beef) into 1/4 inch thick slices and garlic into small pieces. Marinate chicken with garlic, lime, chili sauce, and salt for at least 30 minutes. 
- Heat oil in the pan on high heat. Stir fry chicken (or beef) until cooked. Put aside and keep warm. - Cut onion and pepper into thin slices. Stir fry on a pan on medium heat until pepper softens. - Wrap chicken (or beef) and red pepper in tortillas. Add sour cream, guacamole, and salsa according to taste. - Enjoy your fajitas!
