Grape Tomato and Lemon Juice Chicken Drumstick


Ingredients:
- 6 chicken drumsticks (skinned)
- a dozen grape tomatoes (or regular diced tomatoes)
- 2 tsp of lemon juice
- 1/4 cup of fresh parsley (optional)
- 3 Kaffir lemon leaves
- 1 tbsp Asian pepper (optional)
- 2 tsp of olive oil
- 2 tsp of salt

Preparation:
- Wash chicken drumsticks to rinse off blood. Baste chicken with salt outside and under the skin.
- Cut grape tomatoes in halves. Mix lemon juice, parley, pepper, olive oil, and salt in a bowl.
- Place a sheet of aluminum foil on a roasting pan. Transfer the drumsticks onto the pan and baste sauce evenly on the meat. Cover the meat entirely with aluminum foil.
- Preheat oven at 400F. Bake the chicken covered for 40 minutes. Uncover the aluminum foil and bake for another 20 minutes.
