Italian style Macaroni and Cheese


Ingredients:
- 1 lb lean ground beef
- 1 small onion, diced
- 1 can (28oz) diced tomato, drained
- 1 box (340g) gluten-free elbow pasta
- 1.5 cup mozzarella cheese
- 1 tsp salt
- 1/2 tsp ground black pepper
- 2 tbsp canola oil
- 1.5 cup water

Preparation:
- Heat a skillet on medium-high heat. Add onion and saute until aromatic. Then add ground beef and stir until brown. Mix in tomatoes and sprinkle salt and pepper. Simmer for 5 minutes.
- Stir in dry elbow pasta and water. Simmer for 10 minutes.
- Sprinkle the top with mozzarella cheese.
