Cantonese Style Lemon and Ginger Chicken


Ingredients:
- 3 whole chicken breasts
- 3 egg whites
- 1 1/2 tbsp corn starch
- 3 tbsp vegetable oil
- 1 tsp salt

Ingredients for sauce:
- 1/4 cup lemon juice
- 2 tbsp sugar
- 1 tbsp honey
- 1 tbsp corn starch
- 1 tsp ginger, minced
- 1 cup water

Preparation:
- In a large bowl, combine chicken, egg whites, 1.5 tbsp corn starch, and salt. Marinate for 30 minutes.
- In a separate bowl, mix sauce ingredients.
- Heat oil in a skillet on medium-high heat. Add chicken and saute for 3 minutes until the  meat changes color. Turn heat up and pour sauce into the skillet. Stir constantly until sauce thickens and reach consistency. Simmer for 10 minutes.
