Fish Scented Sliced Pork Stir Fry

Ingredients:
- 1 lb tenderloin pork, chopped in roughly 0.5 cm x 0.5 cm x 4 cm sticks
- 1 tsp ginger, minced
- 1 tsp corn starch
- 1 tbsp gluten-free soy sauce
- 1 tbsp fish sauce
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- 1/2 tsp red pepper
- 5 tbsp vegetable oil
- 1/4 carrot, peeled and sliced
- 1 cup black fungi, soaked and sliced

Preparation:
- Marinate pork with ginger, corn starch, soy sauce, and fish sauce.
- Combine red wine vinegar, sugar, and red pepper in a bowl.
- Heat 3 tbsp oil in a frying pan on high heat. Saute the pork until the meat changes color. Transfer the pork onto a plate.
- In the same pan, add remaining oil on medium heat. Add carrots and black fungi. Saute for 2 minutes. Bring the pork back to the pan and add sauce mixture. Saute for another 2 minutes.
