Apple Pie



Crust Ingredients:
- 1 cup sorghum flour
- 3/4 cup tapioca flour
- 3/4 cup cornstarch
- 1 tsp xanthan gum
- 3/4 tsp salt
- 1 tbsp sugar
- 3/4 cup butter (or ghee)
- 1 egg, lightly beaten
- 1 tbsp red wine vinegar
- 3 tbsp water

Apple filling ingredients:
- 4 apples, decored and peeled
- 1 cup and 1 tbsp sugar
- 2 tbsp cornstarch
- 1/8 tsp salt
- 1/2 tsp cinnamon
- 2 tbsp butter (or ghee)
- 1 tbsp milk
- 2 tbsp rum

Preparation:
- In a large bowl, combine sorghum flour, tapioca flour, cornstarch, xanthan gum, and salt. Mix well.
- In a separate bowl, combine sugar, butter, egg, vinegar, and water. Mix until smooth.
- Pour the liquid into the dry ingredients. Whisk until the mixture is uniform. Knead the mixture into a dough and separate into two portions, where one part slightly bigger than the other.
- In another bowl, combine apple, sugar, cornstarch, salt, cinnamon, butter (or ghee), and milk.
- Place the smaller portion of the dough on a plastic wrap and roll out the dough into circular disk. Gently pick up the plastic and invert into a 9'' pie pan.
- Place apple filing on the dough.
- Roll out the larger portion of the dough on the same plastic wrap. Invert it onto the apple filling. Close the ends of the pie by joining the top and bottom dough together.
- Bake at 400F for 45 minutes.
