Macaroni and Cheese




Ingredients:
- 2 1/2 cup gluten-free corn pasta or rice pasta
- 1 tbsp gluten-free corn starch
- 1 cup milk
- 2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg* (optional)
- 1/4 tsp cayenne pepper
- 1/3 red pepper, chopped
- 1/3 green pepper, chopped
- 1/4 onion, chopped
- 1 tbsp oil
- 1 cup grated cheddar cheese
- 1 cup ground beef

Preparation:
- preheat oven at 350F. 
- Boil water and cook pasta for 5 minutes. Rinse and drain the pasta. Set aside.
- In a bowl, combine corn starch, salt, black pepper, nutmeg, and cayenne pepper. Add milk to dissolve the starch. Set aside.
- In a skillet, heat oil on medium heat. Saute onion until aromatic. Add red pepper and green pepper until the vegetables soften. Add ground beef and stir until the meat changes color. Finally, add pasta and milk mixture into the skillet and mix well.  
- Transfer the pasta to a medium-sized baking pan and coat the pasta with cheese.
- Bake for 30 minutes.
