Pizza with Chicken Toppings



Pizza Dough Ingredients if Using Pizza Mix:
- 300g of Gluten-free pizza dough mix (e.g.: Gluten-Free Pantry)

Pizza Dough Ingredients If Made From Scratch:
- 1 cup tapioca flour
- 1 cup brown rice flour
- 1/4 cup corn flour
- 1/2 tsp xanthan gum
- 1 1/2 tsp baking powder
- 1/4 cup milk
- 2 tsp olive oil
- 1 tsp honey
- 1 tsp sugar
- 1/2 tsp salt
- 1 cup lukewarm water

Pizza Sauce Ingredients:
- 6 oz tomato paste (or 8 oz tomato sauce)
- 1/4 cup onion, finely chopped
- 1 celery stalk, finely chopped
- 1 tbsp olive oil
- 1/2 tbsp butter
- 1/2 tbsp honey
- 1 tbsp oregano (or 1 tsp oregano if using tomato sauce)
- 1/2 tsp black pepper
- 1 tsp salt (or 1/2 tsp salt if using tomato sauce)
- 1 tsp sugar if using tomato paste
- 1 bay leaf

Topping Ingredients:
- 1/2 lb chicken breast, thinly sliced (or gluten-free salami, ham, sausage, prosciutto, etc.)
- 2 tbsp olive oil if using chicken
- 2 tbsp oregano if using chicken
- 1 tsp salt if using chicken
- 1/2 green pepper, diced
- 3 mushrooms, sliced
- 7-8 slices cheddar cheese (or lactose-free swiss cheese)
- Cured pork and other toppings

Preparation:
- Marinate chicken with salt and oregano.
- In a skillet, heat 2 tbsp olive oil on medium high heat. Add chicken and stir fry until chicken change color. Take chicken out and set aside.
- In the same skillet, heat 1 tbsp olive oil and butter on medium heat. Add onion and celery until aromatic. Add tomato paste, honey, oregano, bay leaf, black pepper, salt, and sugar. Turn heat up until boil and turn heat down to simmer for 20 minutes. Set the pizza sauce aside to cool.
- If using gluten-free pizza mix, follow instructions on package. If making pizza dough from scratch, combine tapioca flour, rice flour, corn flour xanthan gum, baking powder, and salt in a large bowl. Combine milk, olive oil, honey, sugar, salt, and water in a separate bowl. If using a bread-maker, pour the liquid mixture into the bread-maker container, followed by the dry mixture. Use the bread-maker to knead the dough. Take the dough out before baking starts. If kneading by hand, pour the liquid mixture into the dry mixture. Knead until the dough becomes smooth. If too soft, add more corn flour.
- Preheat oven to 350F on bake.
- Grease a round or rectangular shaped pizza pan with butter. Rub fingers lightly with butter and use hands to slowly flatten the dough into a thin crust. Roll the edges up slightly.
- Bake the pizza dough for 10-15 minutes, until the crust browns.
- Take the dough out and let cool slightly. Turn oven down to 400F.
- Smear the pizza sauce evenly over the dough. Cover the pizza with cheese, followed by chicken, mushrooms, green pepper, and other toppings.
- Bake the pizza for 10 minutes, until the cheese starts to golden.
- Take the pizza out and place on a heat-proof surface. Cut into 8 slices.
