Pork Chop in Breadcrumbs

Ingredients:
- 1/2 lb pork tenderloin
- 1/2 tbsp ginger, minced
- 5 tbsp gluten-free rice breadcrumbs
- 6 tsp corn starch
- 4 tbsp vegetable oil
- 3 tsp salt
- 1 stalk green onion, finely chopped

Preparation:
- Cut pork tenderloin into 1/2 cm thick medallion. Rinse the pork in cold water. Marinate with ginger and 1 tsp salt.
- In a shallow bowl, combine corn starch, breadcrumbs, and 1 tsp salt. Coat both sides of the pork with the breadcrumbs mixture.
- Heat 5 tsp oil in a flat pan on medium heat. Brown pork on both sides for 6 minutes, until pork is cooked on the inside and crisp on the outside. Take pork and place evenly on a dish.
- In the same pan, heat 1 tsp oil on high heat. Saute green onion for 1 minutes and add 1 tsp salt.
- Pour the green onion on top of the pork. Voila!
