Filipino Adobo

Ingredients:
- 10 chicken drumsticks
- 1/2 cup rice vinegar
- 1/2 cup gluten-free soy sauce
- 1/4 cup brown sugar- 1 cup water
- 3 cloves garlic, minced
- 2 tbsp ginger, minced
- 2 bay leaves
- 1/2 tbsp black pepper, crushed
- 2 tbsp olive oil

Preparation:
- Score evenly over chicken drumsticks two to three times.
- Marinate the drumsticks with rice vinegar, soy sauce, brown sugar, water, garlic, ginger, bay leaves, and black pepper for 30 minutes.
- Heat oil in a large skillet on medium heat. When oil is warm, brown chicken on both sides. Add the marinating sauce to the skillet and coat the drumsticks. Bring the sauce to a boil. Simmer for 30 minutes. Turn the drumsticks once.
- Take the drumsticks out and place on a plate. Simmer the sauce on low heat until thick. Place chicken back to the skillet and coat with sauce.
